The Japanese are masters of steel, and they use it to create beautiful hand-made knives with a variety of cutting edges. They can be made from stainless steel or hagane which is the same kind of metal used in making Japanese swords. "It was the most sought-after material in ancient Japan, but if a samurai could not afford it, he also had the Orishigane available, which was made from his leftovers. Or there was the Hocho Tetsu, which was a lower carbon version.

The Tamahagane is the same steel that blacksmiths such as Masamune, Muramasa, Amakuni, Kotetsu, and more used to create their renowned blades." - Samurai Swords Store

How is the Japanese knife made?

Japanese kitchen knives are made with a single blade, which is shaped in a way that allows it to cut through meat and vegetables more easily. These knives use an edge of either carbon steel or stainless steel, which moves smoothly through food without tearing them apart. Japanese knives are designed specifically for use on fish and meat so they have a thinner blade than their western counterparts, which means they can get through tougher cuts of meat more easily. The blades also stay sharper for longer because they're made from high-quality steel rather than stainless steel.

If you've ever used an inferior quality kitchen knife before then you'll know how infuriatingly frustrating it is when the blade keeps slipping off what you're trying to cut or sticks onto the surface of your food.

"Their goal is to create blades that have a consistent hardness throughout, without any fatal flaws that could lead to trouble down the road. In some cases, the knife-maker forges together layers of different metals to combine their relative strengths and balance out their disadvantages, creating layers of cladding that are sometimes visible as a beautiful ripple of waves on the blade." - Daniel Gritzer, Culinary Director

Zelite Infinity Chef Knife Review

Where is the Zelite Infinity manufactured?

The knife is manufactured in Yangjiang, China. Yangjiang is famous for being the capital of knife and cutlery manufacturing in China and has been for over 1500 years. This is one of the reasons why Zelite built it's factory there. The blade material is Japanese VG10 Super Steel 67-layer Damascus imported directly from Takefu in Japan. Each knife is painstakingly crafted over a 60-day manufacturing cycle time by skilled artisans using the strictest German SOP's (Standard Operating Procedures). Further, each product is 100% quality inspected prior to being made ready for shipment.
